I feel like a "foodie" lately. However, I'm not sure that's true. I always thought a true foodie ate without fear and had no notion of weight, portion, or calories. I, on the other hand, work a 12 step food program and eat with some hesitancy, especially in regards to meat. There must be a happy medium somewhere between the two and I am searching for it with some success. Here are thoughts on food:
1. I had a steak cooked medium well on New Year's Eve and it was delightful. I must say that eating a well done steak is starting to taste like pot roast. Part of hell is certainly freezing over as I type these words. I did have to avoid making direct eye with the bloody looking juices spilling out of the center, but I understood that these were perhaps the same juices exploding in my mouth with wonderfulness.
2. I am into cooking new dishes lately. In my little fridge, there is fresh cilantro, parsley, tarragon, chives, and rosemary. I have lemons and limes on the counter. Citrus fruits are overflowing my little wooden basket. The smells are delightful.
Yesterday I made black bean tacos with fresh feta slaw. Top that with a little tabasco sauce and it's heavenly. Jared stated that he had never eaten a taco without meat, but I think he survived and even liked it.
Last evening I made a warm salad of roasted cauliflower, endive, red kidney beans, feta, and toasted walnuts. I added lemon juice, rosemary olive oil, chives, parsley, sea salt, and ground black pepper. It was awesome and a great accompaniment to warm fall-off-the-bone chicken.
And I just finished a bowl of pasta mixed with asparagus and covered in melted goat cheese with fresh lemon juice, minty tarragon, sea salt, and pepper. Delightful. I'd like to thank smitten kitchen for all of the these recipes and so many vegetarian options.
3. To end all of that goodness, I have diet grapico in the fridge. I know, I know. But, I either like something or I don't and I don't like wine. All the other good stuff makes me break out in hives and therefore, I am left with water and diet grapico. So, diet grapico is as close to a good wine as I am willing to go.
